Smoked duck leg ragu! Smoked up some duck legs rubbed with @twistedoliverbbq AP rub and @texanz new championship rub on the @zgrillsoz mini. Onion, garlic, carrot, red wine, chicken stock, rosemary, bay leaves and crushed tomatoes in a pot with a generous helping of @thefoursaucemen white rub. Added the duck legs to the pot after a good smoke and put the lot back into the @zgrillsoz mini for a few hours to braise! Made up some potato gnocchi and served it all together topped with some parmesan.. absolutely 🔥🔥🔥

From teaching to learning... I helped @branded_bbq teach a class yesterday and today I sat in on a competition class from @morebetterbbq and learnt an absolute truck load! Finally back in New Zealand after a huge trip in Texas!! So very many miles done, so many epic sights seen and amazing food eaten. We met some truly wonderful people but biggest shout out goes to Bobby and Sheena from @twistedoliverbbq ... The way you guys looked after us at the world champs was unbelievable and I can wait to host you in nz soon and repay the favour! For the Worlds I placed 23rd out of 50 in my heat & didn’t make it to the finals. The scoring was super high and I'm blown away getting 23rd with what have been a golden ticket all day in NZ... Those yanks have got it pretty dialed 🤣 The following day was the Cow Town Classic where I bombed and got 119th with a steak I was super happy with but hey that's comp BBQ 🤷 🤷🤷 Thanks to @bbcharcoal for generously giving us some charcoal and wood, we really enjoyed cooking with it. Thanks also to @hastybakegrills for sorting the kiwis out with grills to cook on they are absolute weapons!! Suuuuuper stoked to see so many kiwis over there with a few getting to walk the stage I'm so very proud of you guys! A very big weekend here at the Canterbury A&P Show - ‘Let There Be Meat’ BBQ Competition. Competing alongside @matthewtait_bbq & @quetensils 🔥 Day one saw us enter the Steak Cookoff Association Steak & first ever sanctioned Whole Hog Cook-off. Finally cracked steak again and took out first place earning me my golden ticket to the world championship in Texas next year! Hog was smoked in the awesome @smokedogg_smokers gravity fed cabinet. Unfortunately later in the cook the front shoulders dropped resulting in a scoliosis/stegasaurus effect 😆 This knocked us back in presentation, but happy with 2nd for flavour. We had never done a whole hog before, so we were really pleased with the outcome. Day two was the hand ins for the NZBA competition for chicken, ribs, pork & brisket. Luck was not on our side in placings, with a 13th for pork being our best result. Happy with two 50’s & two 49’s for presentation however. Massive thanks to the boys at The Smokin' Que for laying it all on & everyone else involved 👏👏 Big shout out to the huge amount of North Island crew who came all this way, great to meat most of you.
